Easy Like Summer Morning Song and Easy Chicken Biscuits (One Word Sunday)

The theme for One Word Sunday is Easy.

The first thing that came to mind?

It was The Commodores (1977) “Easy Like Sunday Morning” song.

The second thing that came to mind?

The almond flour biscuits I whipped out last night.

SO EASY!

so easy to make almond flour biscuit treats – served alone or with meat. 

Almond Flour Biscuits Recipe

  • Two Cups Almond Flour 
  • Pieces of shredded chicken and a little crushed garlic 
  • 3/4 cup of oil (I used olive oil and avocado oil) 
  • Three eggs, salt and pepper.  Pinch of baking soda (one teaspoon) 

Mix items in large bowl. Form into biscuits, or press into little loaves onto a parchment paper-lined pan

Cook at 350 degrees for 9 to 13 minutes (ovens vary). 

  • Let cool and then cut into serving-size pieces. 
  • Serve warm with (a really good quality) butter (or add organic honey)
  • Reheat Option: Put a few pieces in the air fryer for a crunchy treat.

    1. Yeah Clive – hope it has not been too much of moi! Only one more coming up with the Floyd post and then NO MAS (at least until maybe 2021) how does that sound?
      And I really did not want to overdo the mentioning of one blogger and left the comic out but then I thought “there is no rule here – and it is my option” and so in went the comic and the mention

  1. Oh my goodness I used to love the Commodores (well I guess I still love them just never think about listening to them anymore until now!) and when I was a kid I got to see them in concert! Recipe sounds easy and delicious…like Sunday morning 🙂

  2. I always liked that song – we had a program on an oldies station every Sunday called “Sunday Morning Over Easy” – your recipe and pictures look great and make me hungry at this late hour.

      1. I used to like that program format a lot and never missed it. The station has retooled their music and that slot is now called “Sunday Morning Brew” and is a different concept. The “Quiet Storm” sounds interesting too.
